Venàrdi Gnocolàr

Oggi : si fa i gnocchi ...

.Nel giorno del Venàrdi Gnocolàr è usanza in tutta la provincia di Verona mangiare a pranzo un piatto di gnocchi fatti in casa.
...la sfilata di Maschere...
....Carri allegorici e maschere multicolore, capitanati da Papà del Gnoco, sfileranno festosamente per le vie del centro per la gioia di grandi e piccini.  Ma la festa proseguirà poi per tutta la sera. E' infatti tradizione che al termine della sfilata, in Piazza San Zeno, vengano offerti piatti fumanti di saporiti gnocchi di patate conditi rigorosamente con salsa di pomodoro.   A ogni quartiere corrisponde una maschera che solitamente si ispira a un personaggio storico o a un mestiere. La maschera più importante è il Papà del Gnoco.

La sua festa si svolge il Venerdì Grasso che è chiamato, per l'appunto, Venerdì Gnocolar. L'investitura del Papà del Gnoco avviene ogni anno qualche settimana prima dell'inizio del Carnevale mediante votazione popolare a cui partecipano migliaia di Veronesi in Piazza San Zeno, cuore pulsante della tradizione "carnevalesca" veronese.
 La storia in breve ... Il carnevale veronese ha origini molto antiche. Nel 1500 una terribile carestia colpì Verona, causando un aumento del prezzo del pane. Il popolo affamato insorse, assaltando i forni. Un gruppo di cittadini fece cessare la tremenda rivolta distribuendo pane, farina, patate e altri viveri agli abitanti più poveri. Nel tempo questi ingredienti diventarono la base per la preparazione dei gustosi gnocchi veronesi.

The Vancouver lower mainland is blossoming into a culinary wonderland.
Just about 1 year ago Chez Christophe opened their doors in Burnaby BC.
Christophe Bonzon is no stranger to Vancouver as he was the head pastry chef a Cin Cin for 2 years then he decided to open his own patisserie in North Burnaby – Chez Christophe 
Location: 4712 Hastings Street, Burnaby BC.
Who is Christophe?
Swiss born Christophe first discovered his passion for chocolate and the age of ten while he was helping his mother make truffles for Christmas gifts.
Christophe’s resumé is studded with a decade full of intense apprenticeships and coursework in the fine art of pastry and chocolate, both in his native Switzerland and in France. Amongst many other institutions he has studied under some of Europe’s grand masters at Zurich’s Chocolate Academy, and at l’Ecole du Grand Chocolat Valrhona in France. Various professional postings followed, including as pastry chef at Confectionary Schneider in Switzerland, followed by Choux Cafe in Western Australia. Christophe worked as an Executive Pastry Chef at one of the finest French Pastry Shops in Perth.
Now Christophe and his lovely wife Jessica, along with their great assistants create pastry and chocolate magic everyday (open Tuesday- Saturday with special hours during the holidays)
The quality and aromas are noticeable from the second you walk in the door.
Christophe will always find his way to say hi to all that walk in the door or at the very least a friendly wave from behind the finishing room that you see through the glass.
At Chez Christophe you will find fresh made pastries every morning as simple as a traditional croissant

or one that is filled with extra treats like the double baked maple pecan croisssant to warm your tummy. The pastry is light, flakey and buttery just as you should expect from a traditional croissant.

And enjoy it with a fresh cup of coffee of your liking.
From looking into the pastry showcase your eyes are quickly are pulled to the chocolate and sweet pastry / cake showcase and your mouth likely will start to water at the delectable treats in front of you.
You will surely recognize some flavor pairings but also notice some creative twists created by Chez Christophe.

We had a special occasion that we needed a special cake for and we chose the Treo with a special show piece.

Délices en chocolat d’un Yverdonnois au Canada

Ancien apprenti de la Confiserie Schneider, Christophe Bonzon s’est installé dans la banlieue de Vancouver et vole de succès en succès avec ses créations et pièces montées.

Quand il a remporté, à la fin de l’année dernière, la médaille d’or du Prix international du chocolat devant 180 autres confiseurs canadiens, Christophe Bonzon, le «P’tit Suisse» d’Yverdon-les-Bains, a laissé éclater sa joie. Il avait tellement travaillé qu’il espérait figurer en bonne place avec sa truffe Mango, mais il ne s’attendait quand même pas à se retrouver au premier rang. À tel point qu’il avait déjà enlevé sa blouse de pâtissier quand il a été appelé pour recevoir son prix, et qu’il a été contraint de se présenter en tee-shirt.
Cela faisait moins d’une année qu’il s’était installé avec son épouse Jessica à Burnaby, dans la banlieue de Vancouver. Autant dire l’importance de cette récompense pour Christophe Bonzon, âgé de 31 ans, et qui a fait ses toutes premières armes avec sa maman Monique. «A huit ans déjà, il s’intéressait à la pâtisserie et au chocolat et je préparais souvent des truffes avec lui, souligne- t-elle. Après l’école, il a tout naturellement voulu faire un apprentissage dans ce secteur et il faut dire qu’il a eu un excellent maître à la Confiserie Schneider, à Yverdon, dont la réputation n’est plus à faire.»

«J’ai tout de suite eu envie de créer des jolies pièces et de les orner avec des saveurs pâtissières, indique Christophe. Un passage à l’Ecole du Grand Chocolat à Lyon, puis à la Chocolate Academy de Zurich, m’ont encore permis d’affiner ma créativité avant mon mariage en 2007 avec Jessica, une jeune Canadienne anglophone que j’ai rencontrée dans la Cité thermale alors qu’elle était venue travailler comme fille au pair à Nonfoux.» Le couple a alors décidé de partir à Perth en Australie, où Christophe a travaillé pour un confiseur français renommé. Mais comme il ne pouvait pas facilement se mettre à son compte, il a choisi de s’expatrier au Canada.
Pour la fête de la Saint-Valentin de demain, Christophe Bonzon a préparé de magnifiques pièces montées.

Après deux ans en tant que chef pâtissier au CinCin, l’un des meilleurs restaurants de Vancouver, Christophe Bonzon a décidé d’ouvrir sa propre confiserie. Il a ainsi réalisé son rêve et il n’a pas fallu longtemps pour que ses pâtisseries, ses croissants, ses truffes et autres merveilles en chocolat n’acquièrent la notoriété. Àujourd’hui, ses fidèles clients surnomment son magasin «Le pays des merveilles». «Je fais venir mon chocolat de la maison suisse Carma à Zurich, poursuit le confiseur yverdonnois, ce qui constitue un atout. Par exemple, mes croissants au chocolat à base de pralinés fondants sont particulièrement appréciés.»
Chacune de ses pièces montées est fabriquée à la main, comme celles qu’il a préparées pour la Saint-Valentin. Elles reflètent particulièrement son talent et les recherches qu’il fait chaque jour, dès cinq heures du matin, pour renouveler la gamme de ses fameuses gourmandises. Une histoire d’amour et de passion pour l’Yverdonnois de Vancouver, qui souligne que son plus grand plaisir, c’est vraiment de créer quelque chose avant tout pour le bonheur et les papilles gustatives de ses clients.

Christophe Bonzon a remporté sa médaille d’or du Prix international du chocolat avec sa truffe Mango, composée de chocolat au lait suisse avec de la ganache et de la mangue légèrement caramélisée, ainsi qu’un soupçon de poivre rose. Dans sa boutique, on trouve bien entendu d’autres spécialités dont un fameux croissant au sirop d’érable et à la noix de pécan.

Valentines Treats from Chez Christophe

Award winning chocolate master Christophe Bonzon is celebrating his 1st Valentines Day at his shop this year with some special chocolate creations that will make your heart melt!  Since missing the international day of love in 2013 with an Easter opening Christophe and his wife Jessica are in full Valentines Day spirits this year.  Besides the amazing bon bons that Chez Christophe is known for he has also crafted a series of Valentines themed showpieces studded with bon bons as well as a beautiful chocolate dessert creation perfect for sharing!

The dessert that has been created is called the Valentine with Love.  This beautiful dessert is a raspberry and Swiss milk chocolate mousse, raspberry confit, gluten-free chocolate and toasted pecan brownie using 70% OCAO purity from Nature and a hand piped heart of 65% INAYA dark chocolate.  The Sphere is the chocolate mousse component of the dessert and in the middle is the raspberry confit and brownie and on top is the hand piped dark chocolate heart then it’s airbrushed with pink cocoa butter to give it a beautiful finish.
